One of my favorite ways to experience Colombia is through its food. The country’s landscapes and cultures are so diverse that every region feels like its own world, and nowhere is that more evident than in its kitchens. Over the years, I’ve had some incredible meals here, but there are three restaurants that stand out — not just for their flavors, but for the memories they created.

Bogota: A Fine-Dining Surprise at Leo


I still remember walking into Leo in Bogotá with a group of travelers from Miami. The energy was refined yet warm, the kind of place where you knew you were about to have an experience — not just a dinner.

Leo’s tasting menu doesn’t let you choose. At one point, Chef Pablo Naranjo, who studied at Le Cordon Bleu in France and worked in Michelin-starred restaurants before returning to Colombia, came out of the kitchen to see for himself who was enjoying his food so much. Yes, it costs a bit more than the typical Colombian lunch, but it’s on a whole other level — refined flavors, beautifully presented, and constantly changing. Ask what’s on the menu tomorrow, and he’ll simply smile and say, “I’m not sure yet — I’ll decide then.” That spontaneity is part of what makes dining at Zombra so exciting.


And if you want to experience his talent in a different setting, Pablo is also the mind behind the menu at Bosko, an upscale glamping retreat overlooking the lakes of Guatapé. Just like Zombra, it’s a hidden gem where the cuisine is every bit as memorable as the setting.

One of my most vivid memories at Celele was the night we had the entire restaurant to ourselves with a group of well-traveled gay food lovers. Course after course, the excitement around the table built until, at the end of the evening, the guests spontaneously rose to their feet in applause. It was the only time I’ve ever seen a full standing ovation for a restaurant’s staff — a testament to how extraordinary the experience was.
